Sundgau - Southern Alsace Local Gastronomic Specialities

Fried carp: a typical dish from the Sundgau area

Many ponds and pools have been created in the valleys of the Sundgau area where carp is traditionally fished. As the region's star dish, it is seasoned then pan-fried in wheat meal before being fried in oil. As the quintessential Sundgau dish, fried carp is served accompanied with lemon, steamed potatoes or fries, a salad and a glass of Riesling. You can eat it with your fingers!

The region's restaurants also propose a full range of Alsatian specialities: flambée tarts, sauerkraut, game, frogs’ legs, spaetzle, fleischschnackas or baeckeoffe, etc.
