Asparagus

Each spring, gourmets will enjoy the Alsace asparagus, a local speciality eaten in the region since the 5th century and grown on a large scale since 1830.

Simple, fresh and elegant, its production is facilitated by the weather conditions of the Rhine Valley: sandy soil with clay, plenty of sunshine and low rainfall.

The matelote

The matelote is a typical Ried dish: freshwater fish (pike, eel, perch, carp, zander...) are cooked in Alsacian white wine and served with noodles. Each Ried matelote is prepared according to the establishment’s family tradition.
