A region that eats a lot of wild game
Local hunting laws have ensured optimal management of game populations; hence, Alsace is a region that consumes a great deal of wild game. Average per capita consumption is more than double the national average. Ground game (e.g. deer, roe deer and wild boars) is mostly found in the mountains, whereas game birds (e.g. pheasants, ducks and partridges) are mostly hunted in the vineyards and the plain.
Regional specialities
- Pheasant sauerkraut
- Roast partridge and sauerkraut flambé with grapes
- Roe deer noisettes, horseradish and gooseberries
